Crowberries
Crowberries are one of the
Icelandic "fruits".
Well
I know it´s a berry but in a land where you have trouble growing
apples...... then those little things are like "diamonds" for us
"vikings"..... They grow wild all around the country. Those small black
berries are filled with and-oxidants, iron,
vitamin C
- just packed with nutrients. When I was young my parents always went
berry picking in august. Always. And today I go with my girls. We make
some yummie picnic out of it as well - food always taste better in the
nature. It is so precious moments with my girls, having berry blue
faces, most of the berries goes to their mouth...... and the smile is
black/
blue. :)
I will share some of our recipes.
raw crowberries juice
loaded with: iron + andoxidants + vitamin-c
1 cup crowberries
1/4 cup water put
everything in a blender and blend well - squeeze the mixture through a
cloth mesh bag or a double layer of cheesecloth. Ready to enjoy:)
crowberry chutney2 cups
crowberries1 cup coconut flakes
1-2 fresh
chili pepper ½ - 1
red onion, cut in chunks
5 cm
fresh ginger4 cloves
garlic½-1 Tsp
himalaya salt4
lime leaves¼
lime, peeled
1/2 cup chopped
fresh cilantro, loosely packed
1/4 cup chopped
fresh mint, loosely packed
combine all of the ingredients in a food processor and process until combined, the mixture should be a little chunky.
