RAW Lemon + Chia Ice Cream

2 c cashews, soaked for 6-8 hrs
1 Tbsp chia seed, soaked in 10 Tbsp water or other liquid
1/2 c coconut milk (50/50 coconut meat + water)
1/2 c lemon juice
1/4 c agave or other sweetener
1 tsp vanilla
1/4 c coconut oil
1 Tbsp lemon peel, shredded

Put the cashews + chia seed + coconut milk + lemon juice + agave + vanilla into a blender and blend until smooth. Add the coconut oil and finish blending. Stir in the lemon peel.
If you use an icecream maker - follow the instructions. If using muffin mold, scoop the mixture into the mold and freeze for about 3-4 hrs.
