Carrot and Beet Salad


1 organic beet root, peeled and shredded
250g organic carrots, shredded
1/2 fennel bulb, in thin slices
1/4 red onion, finely chopped
handful fresh cilantro, roughly chopped
dressing
1/2 dl organic olive oil or hamp seed or other
1 Tbsp organic mustard or 1 Tsp mustard powder
1 Tsp sweetener f.ex yaccon or agave or dates
1 Tsp greek herbs (blend of timian + mint + oregano + pepper + cinnamon or...)
himalaya salt + cayenne to taste
some pine nut parmesan to spread over the salad if you have it
blend the vegetable together in a bowl - shake all the dressing ingredients together and pour over the salat - enjoy:)
wonderful as a filling in stuffed red pepper or on a romain leave with some pine nut parmesan - yummie
