Sunflower and Buckwheat Greens

1 1/2 c Sunflower/Buckwheat seeds with the hull
Soak the sunflower/buckwheat seed (with the hull) overnight, and rinse and drain. Sprout for 1 day, rinsing and draining twice a day. Spread 5 cups of soil evenly in an 11 by 17 inch tray. Distribute the sprouted seed evenly over the soil, ½ inch from the edges. Moisten the seeds with 2 to 3 cups of water. Place another tray on top, and put it aside for 2 days. When the grass has pushed up the tray, remove it. Place the grass in indirect sunlight and water it daily. Begin harvesting your Greens after 6-8 days, when it has grown to about 6 inches.
