Sun-dried Tomatoes Burger w/Cashew Mayo
100 g pecans – soaked over night
100 g cashew - soaked over night
75 g sun-dried tomato - soaked over night
½ bunch fresh cilantro
½ Tsp curry powder
¼ Tsp paprika powder
hint of himalaya salt or tamari
- process everything in a food processor - make little burgers and dehydrate at 105°F for about 8 hrs each side - brilliant with cashew mayo and salad.......

Cashew Majo
1 c raw cashews, soaked for 2 hrs
1/2 c pine nutst, soaked for 2 hrs
1/4 c water
1/2 lime, peeled
1 1/2 - 2 Tsp curry powder
1 Tsp himalaya salt
1 Tsp onion powder
1 clove garlic
2 Tbsp chives or spring onion, finely chopped
2-3 soft dates, pitted

Puree all ingredients in a blender and blend until smooth. Store in a tightly sealed container in the fridge for up to 2 weeks.
